The Legacy of De Librije and Chef Jonnie Boer

Founded by the legendary Chef Jonnie Boer (1965-2025) and his wife, the esteemed sommelier Thérèse Boer, De Librije has been a beacon of gastronomic innovation since they took the helm in 1992. Within a year, the restaurant earned its first Michelin star, followed by a second in 1999, and the ultimate third star in 2004. We are looking to fill a range of roles, from front-of-house to the heart of our kitchen. We are expanding our team and seeking individuals who can grow with us.

Front of House Team

Host / Hostess

As the first point of contact, you are the face of De Librije. Responsibilities include warmly greeting and welcoming our international clientele, managing our complex reservation schedule with precision, and orchestrating the seating arrangement to ensure a smooth and elegant flow for the dining room. You will present menus and provide a gracious introduction to the De Librije experience.

Service Assistant (Commis Waiter)

This is a vital support role for our service team. You will assist senior waitstaff in delivering our intricate dishes and world-class service. Key duties include refilling beverages, clearing and resetting tables with meticulous attention to detail, and anticipating the needs of both the guests and the service team to ensure a seamless experience.

Beverage Preparation Assistant

Working closely with our sommeliers and bar team, you will be responsible for preparing a wide range of exquisite hot and cold beverages, from artisanal coffees and teas to complex non-alcoholic pairings. This role involves managing the beverage station, ensuring all ingredients are fresh and stocks are replenished, and serving drinks with professionalism and poise.

Sommelier Assistant

An incredible opportunity for an aspiring wine professional. You will support our world-class sommelier team, led by Thérèse Boer. Responsibilities include maintaining the pristine condition of our extensive wine cellar, preparing wines for service, polishing glassware to perfection, and assisting with inventory management. You will have the chance to learn from the best in the industry.

Kitchen Brigade

Kitchen Assistant (Commis Chef)

This is an entry point into our three-Michelin-star kitchen. You will assist the Chef de Parties in all aspects of food preparation, including meticulous chopping, peeling, and portioning of our unique local ingredients. You will help execute recipes with precision and maintain the highest standards of cleanliness and organization in your section.

Chef de Partie

We are seeking experienced section chefs to take responsibility for a specific area of the kitchen (e.g., Saucier, Garde Manger). You will manage your section's daily operations, prepare dishes to the exact standards of the Head Chef, train and supervise Commis Chefs, and contribute to the creative process. This role requires significant experience in a high-level kitchen.

Pâtissier / Pastry Assistant

Join our pastry department to create innovative and breathtaking desserts that provide the final flourish to the De Librije experience. You will assist the Head Pastry Chef in preparing all components of the dessert menu, from delicate pastries and ice creams to intricate chocolate work, all while maintaining a flawlessly clean and organized pastry section.

Support and Facilities Team

Cleaner / Steward

The backbone of our operation, this role is crucial for maintaining our three-star standards. You will be responsible for ensuring the entire restaurant, including the dining room, kitchen, and guest facilities, remains spotless at all times. This includes cleaning floors, surfaces, and equipment after each service and managing cleaning supplies.

General Requirements for All Candidates

- The ability to work effectively and calmly under the pressure of a fast-paced, high-stakes environment.

- A strong team player mentality and excellent communication skills (English is required).

- While formal degrees are not required, previous experience in a similar high-end restaurant or hotel environment is a significant advantage, especially for more senior roles.
